My dear friend shared the recipe for these delicious bran muffins. I love the fact that I can whip up a batch up this muffin batter, store it in the fridge for up to two weeks, and bake up fresh, healthy muffins for my family on any given morning.
Bran Muffins
2 c. boiling water
2 c. 100% Bran Cereal
1 c. shortening
3 c. sugar
4 beaten eggs
1 qt. buttermilk
5 c. flour
5 tsp. baking soda
1 tsp. salt
4 c. Bran flakes
Pour boiling water over bran. Cream shortening and sugar. Add eggs and buttermilk. Add scalded bran. Add flour, baking soda, and salt; stir into mixture. Fold in flakes all at once. Bake for 20 minutes in greased muffin pans at 400 degrees.
After mixing batter, do not mix or stir again. The batter will keep in the refrigerator for two weeks, so you can enjoy fresh muffins whenever you like!
