I've had a cupcake idea percolating in my head for the last several weeks, and today was finally the day when I decided to put my thoughts into action. I've been dreaming up a mocha-flavored cupcake with a luscious filling of coffee cream. Can I tell you how excited I get about stuff like this?
Anyhow, I happily mixed my batter while listening to talk radio. Things were going smoothly. I distributed batter evenly among each of my muffin cups and put the pan into my pre-heated oven.
And then as I wiped down the countertop, I spied my coffeemaker. It then dawned on me that I'd left out one key ingredient...coffee! It was still chilling in the fridge where I'd forgotten all about it!
So needless to say, I made some moist, albeit ordinary, chocolate cupcakes today. At least my non-coffee-fan sons were happy! I did, however, get to make the coffee cream and filled a few cupcakes for my husband and me. They were delicious, but still need a bit of tweaking...not to mention coffee in the batter. I'll be going back to the drawing board soon. And once I've figured them out, I'll share the recipe here.
